Infused Pineapple Upside Down Cake

Take a little mental vacation and bake yourself a tropically infused pineapple upside down cake. Making infused edibles has never been more streamlined and fun with the new Magical Butter 2 Herbal Butter Infuser . It’s the end of the week and you deserve a sweet treat.

What You Need

  • 1/2 Cup Packed Brown Sugar
  • 1 Teaspoon Salt
  • 1 1/2 Teaspoons of Vanilla Extract
  • 1 1/8 Teaspoons of Baking Powder
  • 1 1/2 Tablespoons of Dark Rum
  • 3/4 Cup of Milk
  • 2 Cups Granulated Sugar
  • 2 Cups Cake Flour
  • 1 1/2 Sticks of infused butter made with your Magical Butter 2 Herbal Butter Infuser
  • 2 Eggs
  • 7 Drained Pineapple Slices
  • 9 Inch Round Pie Pan
  • Small Saucepan
  • Medium Bowl
  • Large Bowl
  • Large Electric Mixer
  • Wire Rack

What You Do

  1. Preheat oven to 350 degrees Fahrenheit and ensure that the rack is set to the lowest notch
  2. Place pineapple slices flat and touching each other yet not overlapping at the bottom of the 9-inch pan and set aside
  3. In a small saucepan over medium heat mix 6 tablespoons of infused butter, 1/2 a cup of granulated sugar and 1/2 a cup f brown sugar until melted
  4. Spread this mixture evenly over the pineapple slices in the pan and set aside
  5. In a medium bowl, sift baking powder, cake flour and salt then set aside
  6. In a small bowl, whisk the rum, milk and remaining brown sugar and vanilla. Set aside
  7. In a large bowl, use electric mixer to beat together remaining 6 tablespoons of infused butter, for one minute or until consistently creamy
  8. Slowly add in 1 1/2 cups of granulated sugar and mix until fluffy
  9. Add in eggs one at a time and beat each one well
  10. Reduce mixer speed to low then add in flour and milk mixtures in three alternate shifts each. mix until completely smooth
  11. Pour batter over pineapples in pan evenly
  12. Bake for 50 minutes
  13. Cool pan down on wire rack for 15 minutes
  14. Tap pan gently to loosen the cake and run a knife around the edges to slide it seamlessly out pineapple side up onto a presentation plate of your choice
  15. Cool for 45 minutes
